Yeah ... Not a Pepper Fan

Second recipe of the Medifast Lean and Green Cookbook complete! Tonight's recipe: Zesty Grilled Vegetables & Mahi Mahi. I was really uneasy about this recipe from the start. I'm not very experienced with fish so I asked my mom her thoughts on mahi mahi. She responded with, "Well... it's very fishy." Now, my question is this: if people say, "I like fish as long as it's not too fishy," do they actually like fish? In my mind, fish is supposed to taste ... like fish. I don't know. I may be crazy. Anyway. My mom has a pretty wide pallet so when she said she didn't really care for mahi mahi I got a little worried. That mixed with the fact that I already was pretty certain I didn't like peppers, well, needless to say I was very leery of this recipe. The one shred of hope I had in the meal was zucchini. I have eaten zucchini before (as noodles) and liked it, so I was counting on those to be my little beacon of light.

We have two grills at my apartment: a mini outdoor grill and a George Foreman grill. I was going to be brave and pull out the mini outdoor grill. Of course, when I say "outdoor" I mean open every window in the kitchen and pray it doesn't set off the smoke alarm. However, I couldn't get it to light, which was probably a blessing in disguise. So, I pulled out the George Foreman. I had to prop the base up onto something so the grill was flat (those of you who have one know that the grill is built at a slant to drain off the excess grease, but it kept making the veggies slide down) so I propped it on a skillet on the stove. It was really professional! Once I got the grill set up I cut up the veggies and stuck them on while I defrosted the fish. Then it was time to flip the veggies, and when I went to open the grill I touched underneath (usually out of reach because the grill is slanted) and burnt the CRAP out of my pinky *sad face* and it really hurt!

Finally I had everything cooked and ready to go, after only a minor injury. I decided to try a bite of the peppers first as I was pretty sure I wouldn't like them. And I was right. Well, they were OKAY, but not something I would choose to eat on a daily basis, or ever again really, hahaa. I then turned to the zucchini and I was bummed. I didn't really like those either. The flavor was okay, I guess, but they were really mushy. Also, the center where the seeds are were really watery and I didn't like those pieces at all. Later when talking to my mom about the recipe she said that zucchini should really either be undercooked or overcooked, otherwise it turns out mushy. Thanks mom. Could have used that heads up! The fish was good actually. I guess I don't really know what a "fishy" taste is because it tasted ... like fish. Tasted like any other fish I've had before. I don't know. With all things sampled, it was time to actually eat. I came up with a method of cutting a little piece a pepper off then eating it with a bite of fish. That actually worked and I was able to finish the peppers. I kind of stuffed the zucchini in and just dealt with it. All in all, I'm proud of myself for eating it but I don't think I'd ever make it again. I did like the dressing on the fish though (the recipe didn't call for it on the fish but there was a little left over after marinading the veggies, so I just dumped it on the fish) so I may try that again. Other than that, eh. Not for me. But I'd recommend it for others who like peppers and cooked zucchini.

Zesty Grilled Vegetables & Mahi Mahi

1 pound raw mahi mahi
1 cup zucchini with peel, sliced
1 cup red bell pepper, sliced
1 cup yellow bell pepper, sliced
¼ cup Newman's Own © Family Recipe Italian dressing
