Revolution Roll Success

Last night I was incredibly excited to make Revolution Rolls. These clever rolls originated from the Atkins Diet and produce mock bread out of nothing more than eggs, cream cheese, and cream of tarter. I had heard of them previously but never thought I'd muster up the strength to try them myself. Yesterday morning I made a firm decision - I would make these rolls! I found a recipe that seemed easy to follow and started planning my filling for the bun - ground turkey mixed with a tablespoon of barbecue sauce and a tablespoon of ranch dressing. I was looking forward to it all day, and swallowing down my regular Medifast meals seemed like a chore compared to the delicious experience I'd be having later in the evening.
After work, in midst of a snow storm I might add, I stopped at the grocery store and picked up my ingredients. The rest of the ride home I could feel my mouth practically watering. Bread is definitely one of the things I missed most during my first round of Medifast and I didn't want to start those cravings again this time around. I got home and practically danced my way into my apartment. I set out all the ingredients on the counter. I even happily separated two eggs - something I never really thought I could do period let alone with a smile across my face. I added the cream of tarter to the egg whites, per the instructions, and started mixing. I mixed. And mixed. And mixed. And mixed. And nothing was happening. It was still liquid goo. My arm was getting tired, as was my patience. After about ten minutes of mixing I couldn't take it anymore. I was so angry that it didn't work I literally through the bowl of whites, and yolks, into the sink. I am not exaggerating when I say there was egg everywhere! (I may have some anger management issues.)
Needless to say, I was upset. I went online to the Medifast forums and questioned why in the world it didn't work. I did everything I was supposed to! Well, apparently, you have to mixed the whites with an actual hand mixer. I, someone living on their own for the first time and lacking certain kitchen appliances, was using a fork. NO WHERE in ANY instructions for these rolls did it specify using a hand mixer - and I have looked at countless recipes for these rolls. I was SO angry! I made a turkey sausage and salad and said, "Forget it." anticipating another attempt this evening.
And the result? SUCCESS! It's all in the mixer!

Ingredients:
3 Eggs
3 tablespoons Light Cream Cheese
A pinch of Cream of Tartar*
1 packet Splenda (optional)
*You can use White Vinegar or Lemon Juice as a substitute
Instructions:
Preheat oven to 350 degrees.
Separate egg whites from egg yolks, putting each in a separate bowl.
Add cream of tartar (or vinegar or lemon juice) to whites.
Beat whites WITH MIXER on high until stiff peaks form and set aside.
Add cream cheese and splenda, if using, to yolks.
Whisk yolk mixture until blended.
Gently whisk yolk mixture into whites - do not over-mix.
On a cookie sheet lined with parchment paper, make six equal portions of mixture.
Bake at 350 degrees for 20 minutes.
If additional time is needed, check rolls every 5 minutes.
Yield:
3 servings (2 rolls per serving)
⅓ Lean, 0.16 Condiments (with Splenda), and 1 Healthy Fat
