The Wonder that is Cauliflower

I have heard about the versatility of cauliflower in a low carb diet for a long time now, ever since my first round of Medifast. I have found recipes all over the web featuring it's capabilities in making healthy versions of carb-y favorites. But it wasn't until today that I truly discovered the wonder that is cauliflower. I finally made Cauliflower Pizza, and can I just say - O.M.G! It was delicious!

I couldn't believe how good this was. It does smell like cauliflower, so you have to kind of get past that - but the taste? Flavorless bread. That may sound odd to someone not on a diet that denies you carbs, but for me, it's heaven! My mom and I had a recipe for pizza that was great - but it used Medifast meals for the crust. So not only did it take up more of your daily food allowance, but it was also a pain in the ass to make. Rolling out the dough took forever and was a challenge for even two people to master. I was able to make this all by myself, with very little culinary knowledge and even less culinary equipment. I will admit I was a little hasty in my removal of the crust from the oven and it probably could have cooked another 10 or 15 minutes, but I was really anxious! I think I will be cooking more recipes like this to keep things interesting. My first round I was doing a lot of cooking with the Medifast meals, but this time I think I'm going to focus on making my Lean and Greens more interesting instead of my ever popular grilled chicken salad.

 Cauliflower Pizza

Ingredients:
1 cup shredded Cauliflower
1 oz Low Fat Ricotta
1 oz Light Mozzarella
¼ cup Egg Beaters

Instructions:
Preheat oven to 425 degrees.
Mix ingredients into a medium-sized mixing bowl.
On a cookie sheet lined with parchment paper, pour mixture into a circle.
Bake for 45-60 minutes or until desired crispiness.
Top with sauce, cheese, and toppings to taste.

Yield:
1 serving (1 crust per serving)
½ Lean, and ⅔ Green
